My doctor told me that it wouldn't be a good idea for me to begin anti anxiety medications while I was still in College because it can mess with me more than help.
I don't agree with your doctor.
I would recommend starting them between semesters, though, because they affect everyone differently, and some of them can be not so great.

How normal is it for my 18 month-old son to suddenly develop intense separation anxiety from mother, even when left with very familiar relatives (including father), even when he can see mom simply stepping away a moment?

Well, I certainly don't live in a war zone, but there is enough coverage of the war to make anyone squirm.
I basically read the newspaper to avoid the talking heads on TV yelling at each other to advance their own political agenda. And, when reading the newspaper, I try to read only the news, and not the editorials and columnists.
This way, the news comes in a bit more focused and I can zoom in on reality rather than dwell on hysteria and fall into stress and anxiety.
